🍽️ Ingredients:
500g baby carrots, peeled and trimmed
1 tablespoon olive oil
2 tablespoons Beerenberg Orange Blossom Honey
1 tablespoon fresh orange juice (optional, to boost citrus notes)
Sea salt and cracked black pepper, to taste
Fresh thyme or parsley (optional garnish)
🔥 Method:
Preheat oven to 200°C (180°C fan-forced).
Toss carrots with olive oil, salt and pepper on a lined baking tray.
Roast for 20 minutes until starting to soften.
In a small bowl, mix Beerenberg Orange Blossom Honey and orange juice.
Drizzle the honey mixture over the carrots, tossing to coat evenly.
Return to oven for another 10–15 minutes, until glazed and caramelised.
